Tomato & Corn Soup | A Simple Savory Recipe

Some foods are polarizing when it comes to personal taste. In our family we have some members who would like one thing that another hated, and vice versa. Corn was always one of my favorite vegetables, but for my brother he gagged at the thought of it. Same goes for my mum's famous tomato and corn soup. Oddly I'm not a huge fan of the mixture, but my parents absolutely love it. I do know there are different takes on the recipe, and depending on how complicated you want it you can add other things like onions into the mix to make it more flavorful. Southern Skillet Cornbread

Those of you who grew up in the South likely know what cornbread is. It is basically a cake made of cornmeal flour, and buttermilk. Some people add sugar for added flavor. What my mum, and grandmum did to bake the cornbread mix in their time is what makes it so good. After mixing the ingredients properly in a proper measurement, and consistency with the flour sifted beforehand leaving it in a doughy texture you'll need to ready an iron skillet, and pour the mixture in. It is the iron skillet in a properly heated oven that allows for the browning of the cornbread, and the creation of a crust-like topping, keeping the inside more moist. This paired with milk or beans makes for the perfect Southern meal.

INGREDIENTS:

- Buttermilk / Milk

- 1 Egg

- 1 Tsp. Canola Oil

- Martha White Self-Rising Cornmeal Mix

The Four Main Types of Corn In the US

According to the American Farm Bureau there exists four main types of corn in the United States. These types include Dent, Sweet, Flint, and Popcorn. I am personally familiar with what we call "Jack Pot Sweet Corn" that is a variety with mixed tone kernel colors. It has a distinctly sweet flavor that outshines a lot of the more traditional types like the yellow corn you often times buy at the grocery stores.

Whether you buy it through a store or a fresh from a farmer, corn is a delicious meal time vegetable that can be eaten straight from the cob, or as kernels taken from said cob. Corn in stores usually come in canned, and frozen varieties while corn from the fields must be shucked, washed, and prepared for a meal in a more hands on way. I have shucked my fair share of corn growing up, and it is quite the experience. Shucking, for those who are unaware, is simply removing the leaves, and stringy protective outsides of the corn cob.

A Brief History of Corn

You've probably heard the age old tale of how settlers from the East discovered corn through a meeting with the native Americans. What if I were to tell you that corn actually existed well before that? Perhaps not in the same form, but in it's natural state? Some historians believe corn actually originated in Mexico about 7,000 years ago. They had a brand of corn that wasn't as kernel blessed as the corn we know today, but it still produced crops. These crops were a wild form of grass known as Teosinte. As history would later disclose this cultivated early corn made it's way to the Americas, and became a staple food for the native Americans. The native Americans would further the corn evolution, and come to call it Maize. From then on corn became a global phenomenon with various variants of the beloved vegetable which have been utilized in cultural recipes ever since.
