A Brief History of Corn

You've probably heard the age old tale of how settlers from the East discovered corn through a meeting with the native Americans. What if I were to tell you that corn actually existed well before that? Perhaps not in the same form, but in it's natural state? Some historians believe corn actually originated in Mexico about 7,000 years ago. They had a brand of corn that wasn't as kernel blessed as the corn we know today, but it still produced crops. These crops were a wild form of grass known as Teosinte. As history would later disclose this cultivated early corn made it's way to the Americas, and became a staple food for the native Americans. The native Americans would further the corn evolution, and come to call it Maize. From then on corn became a global phenomenon with various variants of the beloved vegetable which have been utilized in cultural recipes ever since. What are some of your favorite corn related recipes?
